Sausage and Caramelized Onion Bread Pudding

This would probably be good for breakfast, but it was great for dinner.



Ingredients:
1 1/3 C low-fat milk
2 pinches salt
3 eggs
8-10 slices of French bread torn into 1-inch cubes
1 large yellow onion diced
1/4 C apple juice
4 oz chicken Italian sausage w/ casings removed (about 3 links)
1 C cheddar cheese

Steps
1. Tear bread into pieces.










2. Mix milk, eggs, and salt and pour over bread and toss to coat. Let sit for 20 mins.
3. Heat large skillet over medium and saute onion for ~10 mins.










4. Add apple juice and saute another 5 mins.










5. Add sausage and break into pieces with back of a spoon (or tear apart with a fork). Cook for about ~7mins.


6. Add sausage mixture and cheese to bread mixture, toss. Pour into 8-inch square baking dist and cook for 40 mins at 350.

  1. I am going to make this on Sunday. I am going to try and play around with andouille sausage. I hope it turns out awesome.
