Smashed Potato Soup




This recipe requires a crock-pot, which pretty much does all the work. You're going to let the potatoes cook for about 6-7 hours on low, so you could start this around lunch time and it'll be ready for dinner.

Ingredients
-2.5 lbs of red potatoes
-3 cups of chicken stock
-3 cloves of garlic minced
-several dashes of salt and pepper
-1/3 C half & half
-1/2 C shredded cheddar
-1/2 C diced roasted red pepper (I use the kind from a jar)
-couple of strips of bacon, chopped
-couple of green onions, diced

Steps
1. Wash potatoes. I leave the skins on, but if you prefer you could peel them. Cut into quarters (or sixths for bigger potatoes).


2. Dice roasted red pepper.










3. Add potatoes, chicken stock, red pepper, garlic, and salt & pepper to crock pot.










4. Let that stew for 6-7 hours on Low.
5. Smash potato mixture with a potato smasher.










6. Add cream, and more salt and pepper (to taste).
7. Top with bacon, cheddar, and green onion.
